The Sodi of S. Niccolò is the Grand Cru of Castellare di Castellina, among the first historic Supertuscan made exclusively with native grape varieties: 85% Sangioveto and 15% Malvasia Nera. The origin of the name derives from the word used by Tuscan farmers to describe those lands that had to be worked by hand, being too hard (precisely firm) or too steep to allow the use of oxen. San Niccolò, on the other hand, is the name of the 14th-century church that stands on the property of Castellare. On the label, the iconic little bird, which for over 40 years has been a symbol of the daily commitment to sustainable viticulture. The 2022 vintage celebrates the 45 harvests, a special birthday with an elegant robe, the black-bottom label, worthy of the best occasions.

Pure Cabernet Sauvignon, putting Castellare’s productive capacities to the test with the rest of the world. Work carried out in the vineyard and a wine-making process focused more on elegance than power. A result which, apart from the strong note of a Cabernet, goes a long way to illustrate the characteristics of the terroir.

Neither too dry nor too sweet. Produced in strict accordance with tradition, but with Malvasia Bianca and a small amount of Trebbiano grapes dried out in an aired area and not on “cannicci” (special wicker surfaces). And then in half-barriques with 20 to 30 year old deposits (“madri”). There’s never enough.

Grappa di Sangioveto

The secret of great Grappas lies in the quality of the marc and the speed with which these are distilled, as they are therefore able to retain all the aromas and softness of the great grape. Grappa di Castellare is produced using Sangioveto marc, brought to be distilled within 36 hours and thus able to maintain the freshness of the aromas and notes typical of the grape. The result is a distilled wine of unparalleled finesse, remarkable in terms of its purity and quality.

Aceto di Castellare

When wine goes bad it becomes vinegar. Aceto di Castellare is made with carefully selected wine and based on the refined “truciolo” or chips production method (the wine is percolated through wooden chips). A reverse challenge focused on defeating synthetically produced vinegars. A natural, unflavoured vinegar characterised by a colour which alone invites its use to season any dish or side dish.

Olionovo di Castellare 2025

Unlike wine which generally improves with ageing, extra virgin olive oil offers its best qualities when it is freshly pressed. In order to underline this characteristic, Castellare has patented the name Olionovo, expression literally meaning “new oil” and used by farmers to define fresh extra virgin olive oil that has just been pressed. Characterised by a deep green colour, just the right amount of spiciness, lively and pleasant on the palate.

Rocca di Frassinello 2020 Lim. Ed. 20 ANNI

Twenty years ago, on the hills of Rocca di Frassinello estate, the first harvest took place. From the bunches of Sangiovese, Cabernet Sauvignon and Merlot, Rocca di Frassinello – Maremma Toscana 2004 was born, the first label, the grand vin according to the Bordeaux classification, the maximum expression of the Italian-French project that gave life to Rocca di Frassinello. To celebrate this special anniversary, a limited edition of the Rocca di Frassinello 2020. Only 3 thousand numbered bottles, produced with the best Sangiovese, Cabernet Sauvignon and Merlot grapes. In particular, the Merlot grapes are the same ones that give life to Baffonero, the top wine of the cellar considered among the best Merlots in the world, as recently stated by the French journalist Jean-Francis Pécresse.
