Produced in strict accordance with tradition, but with Malvasia Bianca and a small amount of Trebbiano grapes dried out in an aired area and not on “cannicci” (special wicker surfaces). And then in half-barriques with 20 to 30 year old deposits (“madri”). There’s never enough.

Baffonero takes its name from a vineyard, 100% Merlot, that was one of the first to be planted at Rocca di Frassinello. The company was born of a joint venture between Castellare di Castellina and Domaines Baron de Rothschild-Lafite, the most famous chateau in the world. The Baffonero vineyard lies below the winery designed by Renzo Piano, on terrain with perfect exposure.

On the hill of San Germano the vine was already cultivated 3,000 years ago by the Etruscans. To testify, the discovery of the necropolis of San Germano, whose tombs have returned objects of the funeral equipment related to the production of wine. A millenary history that has allowed the plants to selfselect themselves, naturally developing their defenses against climatic and biological adversities, and therefore to obtain healthier and excellent quality grapes.
