Aceto di Castellare

When wine goes bad it becomes vinegar. Aceto di Castellare is made with carefully selected wine and based on the refined “truciolo” or chips production method (the wine is percolated through wooden chips). A reverse challenge focused on defeating synthetically produced vinegars. A natural, unflavoured vinegar characterised by a colour which alone invites its use to season any dish or side dish.

Unlike wine which generally improves with ageing, extra virgin olive oil offers its best qualities when it is freshly pressed. In order to underline this characteristic, Castellare has patented the name Olionovo, expression literally meaning “new oil” and used by farmers to define fresh extra virgin olive oil that has just been pressed. Characterised by a deep green colour, just the right amount of spiciness, lively and pleasant on the palate.

Twenty years ago, on the hills of Rocca di Frassinello estate, the first harvest took place. From the bunches of Sangiovese, Cabernet Sauvignon and Merlot, Rocca di Frassinello – Maremma Toscana 2004 was born, the first label, the grand vin according to the Bordeaux classification, the maximum expression of the Italian-French project that gave life to Rocca di Frassinello. To celebrate this special anniversary, a limited edition of the Rocca di Frassinello 2020. Only 3 thousand numbered bottles, produced with the best Sangiovese, Cabernet Sauvignon and Merlot grapes. In particular, the Merlot grapes are the same ones that give life to Baffonero, the top wine of the cellar considered among the best Merlots in the world, as recently stated by the French journalist Jean-Francis Pécresse.

A precious wooden crate, on which the sketch of the Rocca di Frassinello winery designed by Renzo Piano appears, in the intense green that is the architect's trademark. Inside, the best of our production: three purebred Grand Crus such as Rocca di Frassinello, Rocca di Frassinello Bianco and Rocca di Frassinello San Germano in their current vintages. Sangiovese, Cabernet Sauvignon and Merlot, in different percentages, for the two reds and pure Vermentino for the white. A perfect selection for a special gift or simply to taste great wines.

Rocca di Frassinello

The first label, le grand vin according to the Bordeaux classification, the highest expression of this Italian-French project. A wine that succeeds in combining strength, intensity and elegance, with soft tannins to give it a roundness in the mouth. It achieved the highest critical acclaim right from the first harvest, the 2004 vintage. A great competition wine according to Christian Le Sommer, winemaker at Les Domaines Baron de Rothschild-Lafite, who created it together with Alessandro Cellai.

It is the second highest Rocca di Frassinello label, bidding to reach the maximum level of the first. A wine of great substance, in which Sangioveto and the international grape varieties of Cabernet and Merlot fuse for an ideal Italian-French creation. It has already been chosen as one of Wine Spectator’s Top 100 wines.

Ornello 2021

Created in honour of the ‘butteri’, who remain the symbol of the Maremma region, strong and elegant at the same time. The Ornello (from the name of the wood – manna ash), is a long, pointed stick that is still used today for driving cattle. It stands out for its substantial percentage of Syrah grapes that make it very full and rich, nonetheless retaining the typical elegance and freshness of Rocca di Frassinello wines.

Grappa di Rocca di Frassinello

Obtained by distilling the pomace of Rocca di Frassinello wine, it is aged in small oak barrels and therefore amber in colour, lucid and transparent; it has a very intense nose with delicate notes of blackberry in the finish. It is supported by a great elegance that comes to the fore in a balance of aromas, ranging from floral and fruity notes to soft hints of vanilla and wood.

Catarratto 2024 | Colori di Sicilia

Catarratto is one of the 4 monovarietal wines of the Colori di Sicilia line by Feudi del Pisciotto. A historic grape variety of the island, from which fresh whites with fruity and floral scents are obtained. Catarratto by Feudi del Pisciotto is a wine with a pleasant flavor suitable for any pairing. On the label, brush strokes of orange and yellow that recall the citrus fruits of Sicily, taken from the ceramics by Giacomo Alessi, the master of Caltagirone.

The most representative black grape variety of Sicily, it gives intense and full-bodied wines, with a marked acidity.
